USIf it’s your first time trying elk, the Elk Box is an excellent introduction. The meat is lean, packed with protein, and delivers a delicious flavor that’s much milder and less gamey than you’d expect.
USI have only tried the medallions so far and they are quite delicious. A little bit tougher than I expected but that also could have been how I cooked them. Screaming hot pan, quick sear on each side and then into a oven preheated to 400’ until internal temperature was 120
