USExpect a mild, savory taste that bridges beef and venison without strong wild notes. It works well with simple seasoning (salt and pepper) and benefits from a hot, quick sear or reverse-sear approach, finishing around medium-rare so the low fat doesn’t dry it out. A brief rest and optional light sauce or chimichurri can enhance it further.
