USShipped frozen rock solid. Butchering left no blue-skin or waste. This Elk Back Strap was very delicious and left no scraps on the dinner plates. Wonderful freshness and tastes of superb sources and farming. A super value. I'll be back for more! I had some Elk delivered to a family member who said her family all loved it. Furthermore, I just ordered a gift card and she had it instantly. What a way to go as she could order her own choices! Her remarks are those of a trained, schooled Chef.
