USExcellent. Simply excellent. Wife has never tried and refuses to eat "game" but these are not "game". Tender, flavorful, lean, perfect. As good as any freshly hunted Elk I've ever had but more consistent as its ranch raised. First Light did proud in their packaging and shipping and New Zealand did proud in their ranching. Have already re-ordered and see no change on horizon unless I bag a big fat cow Elk this year :)
