Smokey sausage pizza with roasted beetroot and relish

Cooking Method

  1. Preheat oven to 180°C (fan bake).
  2. Trim beetroot and peel off rough skin. Cut into 2 cm dices or rough wedges as desired.
  3. Season with olive oil, salt and pepper and roast for 15-20 minutes (they will still be a little firm but should soften when baked on pizza).

Assembly

  1. Spread onion relish over pizza base.
  2. Top with roasted beetroot and sliced sausage.
  3. Add feta and walnut if desired.
  4. Bake at 180°C for 10-15 mins (or until base is crisp).
  5. Top with fresh rocket (or spinach) and serve.
