USIt's only possible to describe how good this rack of Elk is if you've already had bison, venison and, of course, beef. Both venison and bison share some characteristics and flavors with beef with bison being just slightly different and venison having a much more pronounced gaminess. Somehow elk sits comfortably between the two. I recommend roasting with a nice rub applied, you won't be sorry. Invite friends over, the 8 rib rack generously serves 4. Be prepared to be amazed.
USReceived my order quickly. The elk steaks were still frozen when they arrived. I was given notification of delivery and when it would arrive. I've eaten some of the elk steaks and they were very tender and delicious. I've eaten a lot of elk that I have harvested myself and this meat was at the top of my list.
