USI've received 3 boxes now and have been very happy with the thickness and flavor of the steaks. A small amount of the cuts have had extra fat left on that I feel a butcher probably would have trimmed (as you're paying the same price for extra fat and bone as you do meat). Not a dealbreaker at all. And some may want to save to make tallow.
