USI really enjoyed the steaks, although they were quite small. Great flavor and texture.
USGreatly enjoyed the elk medallions - perfect in sous vide at 130’F to medium rare and then seared. Also used them as a substitute for filet mignon in mini elk Wellingtons which turned out great! Used the ground elk to make a fantastic bolognese, just a straight substitute for ground beef. Will be a frequent repeat customer.
