USWe roasted the rack for a three way Sr. birthday celebration . What a treat! The elk was fabulous and really enjoyed by all, a real unexpected surprise. The word got out to the family and now the 8 rib elk roast will surely be the guest of honor for the next birthday bash.
USI cooked these to 130 and finished on the grill. Served as tomahawk with asparagus for a spectacular meal. My friends reacted with nothing but WOW!

USThe elk racks arrived frozen and vacuum sealed as expected. I thawed out 2 for Christmas dinner. They were very nicely frenched which I was pleased to not have to do so myself. The portions were generous and presented well for the holiday meal. The meat was very tasty with my home made rosemary sea salt rub.
USPackage arrived with dry ice, on time, and frozen stiff. Had to wait till the next day to give time to thaw out. Man, it was delicious. The flavor was as clean as beef, no "gamey" after taste, but with a lean and nutritious underflavor. What a pleasure to eat! I'll be back.
