Wagyu Brisket Smash Burger with Burger Sauce & Pickles

This Wagyu brisket smash burger delivers everything you want in a great burger — crispy caramelised edges, juicy beef, melted cheese and a tangy, creamy burger sauce. Layered with pickles and served on a toasted brioche bun, it’s simple, indulgent and seriously satisfying.
Ingredients
4 First Light Wagyu brisket beef patties
Burger Sauce
1/2 cup mayonnaise
3 tbsp ketchup
2 tbsp Dijon mustard
2 tbsp pickle juice
1 tsp garlic powder
1/4 tsp smoked paprika
1 tsp finely chopped pickles
1 tbsp finely chopped shallot
1 tsp dried dill
1 tsp sugar
1 tsp white vinegar
3/4 tsp salt
Burger Build
2 brioche burger bun, halved and lightly toasted
2 slices aged cheddar or gouda cheese
2 cos or butter lettuce leaves
2 thin slices tomato

- To make the burger sauce, mix all ingredients together in a small bowl until well combined. Chill for at least 10 minutes for the flavours to develop.
- Preheat a cast iron pan or grill to medium-high. Lightly brush the patties with oil. Heat a cast iron pan or grill over high heat. Cook the patties on one side for 2-3 minutes until caramelised. Flip and cook for 1 minute, then reduce heat and place one slice of cheese on top of each. Add a burger cloche if desired (this helps the cheese melt but is not necessary). Cook until the patties are almost cooked through and the cheese is melted. Remove from heat and rest in a warm place for 2-3 mins. While the patties are resting, toast the buns, cut-side down, in the same pan over medium-high until golden.
- Spread a layer of burger sauce on the bottom bun half. Stack the two Wagyu patties on top. Top with a generous dollop of burger sauce, followed by a layer of pickle slices. Add the top bun, pressing gently to ooze the burger sauce. Serve immediately.
