How to make the most of a whole frozen cut

  1. Portion it exactly how you like it

    Once partially thawed, slice off what you need – a Roast for Sunday, and a couple of thick steaks for the week. You’re completely in charge of the cut!

  2. Vacuum seal or wrap tightly

    Airtight is everything. Vacuum sealing is ideal – otherwise, press out as much air as possible before sealing bags. This prevents freezer burn and locks in flavour.

  3. Thaw in the fridge, not on the bench

    Remember, the kitchen bench is the danger zone. Store in the fridge to defrost

  4. Sear all surfaces well

    Ensure you sear all surfaces well.

Meat thawed safely in the fridge is perfectly safe to refreeze.

When thawed in the fridge, the cold keeps bacteria in check. Under 4°C harmful bacteria can't multiply. Your fridge does the hard work. Ensure you refreeze within 1-2 days.

Your kitchen bench is the danger zone. Room tempreture (15-40°C is where bacteria thrive.
