First Light venison mini meat loaves

If you’re heading out for a picnic these tasty mini First Light venison meat loaves make the perfect adventure lunch. The couscous is an ideal solution for those who are gluten intolerant, it also helps provide body and texture. Serve with freshly baked bread, baby pickled onions and ‘cornichons’ pickled baby gherkins.

Cooking method

  1. Preheat oven to 170°C.
  2. Mix mince, couscous, garlic, herbs, mustard and onion together. Season with salt and pepper.
  3. Lay rashers of bacon down into mini meat loaf tins or muffin tins.
  4. Fill with the meat loaf mix then fold over bacon neatly to enclose.
  5. Brush tops lightly with oil and bake for 20 minutes or until cooked through.
