First Light gourmet venison sausages with pickled cucumber & tomato salsa

Venison chipolatas are the perfect convenient go-to meat to have in the fridge or in the freezer. They cook so quickly and are so versatile – ideal for feeding hungry kids in a hurry, or serving gourmet pass-around hot dogs at your next party.

Cooking method

  1. Cook chipolatas on a bbq, under a grill or in a fry pan.
  2. Slice hotdog rolls down the centre and spread with mayonnaise. Mix cucumber with vinegar and season with salt to taste.
  3. Mix tomato with basil, red onion, olive oil and season with salt and freshly ground black pepper.
  4. Divide into 6 and place onto rolls, lay hot chipolatas on top.
  5. Spoon tomato salsa over and served immediately.
